Blogiystävä Railan kanssa on tänä syksynä puhuttu kuivakakuista ja muffineista. (Kaikkien jouluihmisten kannattaa muuten tutustua Railan kauniiseen ja tunnelmalliseen Joulukuusen juurella -blogiin!) Railan leipomissa porkkanamuffineissa on mausteina kanelia, kardemummaa ja neilikkaa. Seuraavaksi minäkin kokeilen joitain jouluisia mausteita.
Sunnuntaina leivottuihin muffineihin käytin K-Ruoan reseptiä. Mantelirouheen korvasin hasselpähkinärouheella, koska sitä sattui kotona olemaan. Muffineita tuli 18 eikä 12... ehkä mittaan ainekset aika suurpiirteisesti. :)
This year our carrot harvest was bigger than ever. :) Now we need to invent many new ways to use those carrots. Four of them went into these muffins, together with cinnamon and chopped hazelnuts. Cream cheese topping with a splash of lemon juice and sprinkled with chopped hazelnuts. I don't have a muffin tin but they came out rather well.

We don't have carrot muffins today, Sara, but Miriam and I just had a coffee with a blueberry muffin. Muffins fresh out of the oven, of whatever kind, are just the thing for a cold blustery day.
VastaaPoistaSara, these carrot muffins look scrumptious. I love carrot cake, and Jess' mother-in-law makes one that is so moist and Yummy. I think the cream cheese frosting and chopped hazelnuts add something extra. Your photos make me want a muffin to go with my coffee. : )

O good idea to bake carrot muffins. I write today a chapter for my new book and one of the personages love to bake muffins. She baked a stroopwafel muffin. Real Dutch :-)

VastaaPoistaYesterday I cooked carrot cream soup (carrot, potato, onion, tomato, spicies) and it turned out very tasty that I didn't expect :-) Today carrot cream soup has been finished...oh!
